Thai Chili Lettuce Wraps

These Thai Lettuce Wraps are an incredible treat that you can be sure will spice up your boring old lettuce wrap. Loaded with quinoa, chicken (or tofu!), cilantro and of course, fresh Thai chili's, these are a cut above the rest and are perfect post-workout! 

Ingredients: 

  • 1 Cup Quinoa (or your favorite rice, such as jasmine, basmati, or brown) 
  • 1 lb Shredded Chicken (Optional to make vegan/vegetarian, simply replace with tofu, if desired)
  • 1 Cup Chicken Broth
  • 1/4 Stick of Butter
  • 1/4 Cup Chopped Fresh Thai Chili's
  • 1 Tbsp. Grated Lemon Peel
  • 2 Limes Freshly Squeezed
  • 1 tsp. Fish Sauce
  • 1 tsp. Fresh Minced Ginger
  • 1 Cup Chopped Fresh Cilantro 
  • Romaine Lettuce Leaves 
Directions: 
Prepare quinoa or rice according to the package. 

Cook chicken in 1/2 of the chicken broth and lemon peel and allow to cook together.

In a separate pan, add butter and saute the Thai chili's, fish sauce, ginger and lime juice. When just about completely sauteed, add fresh cilantro to cook down just a bit and add to the flavor.

Combine all ingredients. Feel free to top with extra lime juice and more cilantro to your liking. Add the mixture to your romaine leaves, wrap up and enjoy!
