Creamy Vegetarian Tater Tot Casserole

Casseroles are such an easy, wonderful to fill your family up while saving yourself the hassle of having to spend countless hours prepping for multiple side dish arrangements. This creamy vegetarian tater tot casserole is sure to be a crowd-pleaser and is the perfect go-to meal for those busy evenings!

1 Bag of Tater Tots
1/2 Chopped Large White Onion
2 Cloves of Chopped Garlic
1 can (10.5 oz) Cream of Mushroom Soup
8 oz. Shredded Mozzarella Cheese
8 oz. Sour Cream
1 Packet of Ranch Dressing Mix
1 Head of Broccoli


  • Prepare the bag of tater tots according to directions, but cut the cooking time in half so that they are soft and defrosted but not crunchy. 
  • While tater tots are cooking, begin steaming the florets from the head of the broccoli.
  • Sautee the garlic and white onion in butter.
  • In a separate bowl combine cream of mushroom soup, sour cream, and ranch packet. Stir well.
  • When all ingredients are prepared, combine the tater tots, garlic and onion, and the wet mix in a casserole dish and mix all of the ingredients well. Allow the tater tots to fall apart into the mixture. 
  • Top with mozzarella cheese.
  • Bake uncovered at 350* for about 40 minutes. 
  • Enjoy!
