What You Can Learn from Amber "the Bully" Brown

Balancing work, motherhood, and daily life is a crazy balance for any mom. But, if you’re a professional MMA fighter as well, that’s a whole other level of insanity. This week, I got the incredible opportunity to chat with Invicta’s own, Amber “the Bully” Brown, to talk a little bit about what drives her the most, how she finds time to juggle everything in her life and what sets her apart from the rest.

First and foremost, what got you into MMA? I started training to get into shape after having my daughter. I started with boxing only, and soon after decided to transition to MMA. It was just a lot more fun to me, and much more to learn.

Creamy Vegetarian Tater Tot Casserole

Casseroles are such an easy, wonderful to fill your family up while saving yourself the hassle of having to spend countless hours prepping for multiple side dish arrangements. This creamy vegetarian tater tot casserole is sure to be a crowd-pleaser and is the perfect go-to meal for those busy evenings!

Ingredients: 
1 Bag of Tater Tots
1/2 Chopped Large White Onion
2 Cloves of Chopped Garlic
1 can (10.5 oz) Cream of Mushroom Soup
8 oz. Shredded Mozzarella Cheese
8 oz. Sour Cream
1 Packet of Ranch Dressing Mix
1 Head of Broccoli

Directions:

Prepare the bag of tater tots according to directions, but cut the cooking time in half so that they are soft and defrosted but not crunchy. While tater tots are cooking, begin steaming the florets from the head of the broccoli.Sautee the garlic and white onion in butter.In a separate bowl combine cream of mushroom soup, sour cream, and ranch packet. Thai Chili Lettuce Wraps

These Thai Lettuce Wraps are an incredible treat that you can be sure will spice up your boring old lettuce wrap. Loaded with quinoa, chicken (or tofu!), cilantro and of course, fresh Thai chili's, these are a cut above the rest and are perfect post-workout! 

Ingredients: 

1 Cup Quinoa (or your favorite rice, such as jasmine, basmati, or brown) 1 lb Shredded Chicken (Optional to make vegan/vegetarian, simply replace with tofu, if desired)1 Cup Chicken Broth1/4 Stick of Butter1/4 Cup Chopped Fresh Thai Chili's1 Tbsp. Grated Lemon Peel2 Limes Freshly Squeezed1 tsp. Fish Sauce1 tsp. Fresh Minced Ginger1 Cup Chopped Fresh Cilantro Romaine Lettuce Leaves Directions: 
Prepare quinoa or rice according to the package. 

Cook chicken in 1/2 of the chicken broth and lemon peel and allow to cook together.
